The Frenched lamb rack is known throughout the world as the most visually presentable of all the lamb cuts. Containing the 5th to 12th ribs and the succulent ribeye or back strap muscle the 8 rib rack has the chine and feather bones and fat cap all removed. They are then ‘frenched’ which is the removal of the meat and tissue from and between the rib ends.

New Zealand Greenshell™ Mussels are one of the world's most successfully farmed mussels, which are found only in New Zealand. Harvested all year-round, farmed mussels are fatter and more tender than wild mussels. Mussels are a great source of iron, protein and omega-3, and the meat is plump and sweet.
